OLIVER DOUGLAS CLEANING STATION HELPS QUALITY BAKER MEET CONTINUOUS THROUGHPUT NEEDS September 30, 2013 News Gadsby Bakery – part of the Lincolnshire Co-operative – is benefitting from an Oliver Douglas Panamatic 700 stand-alone washing installation. The facility, now running at its Southwell premises, is playing a key role in the operational efficiency of the baking process and offers tangible benefits over previous cleaning methods. The Panamatic 700 handles a wide range of cooking vessels, utensils and tools – both stainless steel and plastic – and is used by Gadsby Bakery on an ongoing basis. Highly effective washing is achieved in a relatively short programming time, enabling the unit to be refilled continually to keep pace with the production process. “We produce up to 5,000 loaves per night shift and 100,000 rolls and 6,000 confectionery items per day, so our need to achieve the highest level of washing standards is ongoing,” comments Colin Taylor, Gadsby Bakery Business Development Manager. “Items ranging from utensils, plastic containers, mixing pots, whisks and tools are loaded through the large front door onto a sliding tray or into baskets – both supplied by Oliver Douglas,” he adds. The contents are then rolled into the machine where the wash process reaches a temperature of 60° C and a rinse temperature of 80° C which ensures sanitation is fully optimised with every cycle.
